Every time I hear mousse I look like a cat that’s just heard the kibble bowl being loaded with fresh kibbles. I kid you not! And if you are (probably) guessing that this started out as a modest shiitake mousse (but then came along the parsley and swept my buds away), than you are abso*******lutely right!
You know how they say that truffles are the best tasting (and pocket burning, if I may add) mushroom in the world? Well the first time in my life I had truffles it was in Italy (and I paid a small fortune, so they’d better not hoax me with some Continue reading →
Another super easy recipe coming your way. Don’t judge! 🙂 As I said before – there are days when I haven’t got time for anything, much less for cooking. This is one of my all time favorite cheats. The cool thing is you can add whatever filling you like and it can either go in the ‘dessert’ section or in the ‘main dishes’ section. The pastry I use here is (of course) store-bought. I still feel I’m not up to doing this from scratch, I may try though, I have 11 more months to go, who knows.
When I was younger I HATED spinach. My grandmother used to prepare all of our meals at home and she was kind of stingy on the water (or the time) so she never wasted hours (like I did today) washing a bunch of greens. Every time we had spinach I felt like eating sand, and since I was very young and had absolutely no idea about the world around me I decided that it is supposed to be like that – that spinach is that type of food with this firecracker aura – so I said nothing.
Years later when my grandmother got too old to do stuff around the house my mom started cooking and suddenly spinach was not crackly anymore. You’re getting where I’m going with this one, aren’t you? Oh, the realization that Continue reading →
It was a busy day today for me and bf. After last night’s party which was off the hook, by the way, we had a good night’s sleep and we got up all willing to work today. I was cleaning around the house and bf was studying for his last exam and was in charge of the kitchen today. So this post may be considered guest since bf was doing all of the cooking.
350 g spaghetti
1 medium sized red onion, finely chopped
2 medium sized garlic cloves, finely chopped Continue reading →
Not much time tonight, bf’s sister graduated yesterday. We’re gonna parteeeeeeeeeeeeeey tonight! We were out all day, feeding the cats, some homeless animals, and shopping for tonight’s present. So I have to be out in an hour or so and I have to do this as quickly as possible. It’s really tasty, packed with healthy nutrients, and the most important thing – it’s quickly and easy.
Ingredients 2-3 Tbsp rice meal
3/4 cup (200 ml) soy milk
1/3 cup (100 ml) water Continue reading →
I know that you want to get inside the screen and lick the cup full of chocolaty goodness clean. Unfortunately, you’ll have to do it the ‘hard’ way i.e. make this recipe yourself. The trick is it’s not at all a hard thing to do. It takes about 15 minutes total and it’s really a cheat (my favorite type of recipe :))
Even though I couldn’t get out of bed this morning because of my raging headache and I didn’t even go to work, this warm cup of comfort quickly put me back on my feet! OK, I also had a girlfriend over 🙂 Being around people you like raises your serotonin level and happiness keeps you healthy. Don’t tell me you didn’t know this! What are you waiting for then? Call that special person you Continue reading →
Ever since I discovered Waldorf, I can’t think of a salad I’ve enjoyed eating more. I guess it’s the unique mix of flavors that does it for me. I’m all for trying out new stuff and I’m oh-so happy when I really like some new dish. It goes right inside my memory bank and it’s stored there for rainy days (i.e. when I run out of lunch ideas). And if I like it very veeeery much, then I obsessively make it over and over again until I’m fed up with it, and then it goes to my memory bank. Talk about a vicious cycle!
As I said in my post from yesterday I officially have a cold, so I was feeling really bad yesterday, not feeling at all like going out and getting stuff to make the original Waldorf, so I just grabbed whatever was there in the pantry and everything I thought I needed to prepare myself the ultimate vitamin bomb. This is my version of the salad and it’s not Continue reading →
It’s official – I’m sick! No fever, but nose is running like crazy. Not the best way to start a food post – I know 🙂 I’m not taking any drugs, I do not believe in drugs. There’s this tea we have here, the woman that owns the company has been working with herbs for 20 years now and she is very experienced. Bf recovered from pneumonia by drinking this tea only, because the drug and injection treatment didn’t help him at all. Since then, whenever we get a cold we just drink this tea three times a day for a couple of days and we’re as good as new.
The recipe I am posting today is actually one of my favorite types of patties. If you get the right amount (and ratio) of spices in – they will inevitably taste like real meat (which Continue reading →
I hope you’re having a great day. Unfortunately I’ve got some bad news…bf got a cold yesterday and today I started feeling kind of uneasy too. That didn’t prevent me from heading straight for the kitchen after work and preparing this exquisite potage – one of my favorite types of soup.
This was again one of those first-let’s-see-what’s-left-in-the-fridge moments. So I took some of the potatoes and Shiitake mushrooms we made this Sunday when we were having lunch at my parents’ (however, if you don’t have any leftovers like these just follow the recipe). I know I’ve already said this but I REALLY hate having to eat the same meal few days in a row. That is why recycling is my thing. And recycling food is what I like best, be it a quick meal for Continue reading →
Well if this doesn’t make you go vegan, nothing will (JOKING! You must ALL go vegan before I finish my 365 days vegan recipe delivery for 2014!)
This is the best thing you’ve tried since..well, forever. It is a GREAT show off for your little dinner parties and what’s most important – it tastes like a little piece of heaven.
24 medium sized button mushrooms (roughly 700 g), stems removed and reserved *It is best if all of the mushrooms are approximately the same size because when you put them in the oven they will be cooked evenly.
1 1/4 cup (200 g) raw almonds
4 slices bread, toasted and ground in a food processor (or 1 cup breadcrumbs) Continue reading →
I know I’ve already admitted in one of my previous posts that bf taught me how to cook. Well, this here was one of his culinary escapades. No idea for dinner? Here, just let me look at what’s left in the fridge. And a half an hour later – voilà!
We do not approve of wasting food (or any other resource for that matter). Every time we go to a restaurant we take the leftovers with us (ignoring the condemning eye of the waiter). I am not the kind of gal to eat the same meal for a couple of days in a row, so we try not to make more food than we can eat at one sitting. Anyhow, things do not always go as planned, so we give the leftovers to local stray dogs (be it restaurant or homemade food). Cats do not eat vegan leftovers. They are royal like that! And I have to admit, Continue reading →
Let’s face it, sometimes despite your best intentions and your enormous wish to eat well and treat your body right, there just isn’t enough time, right? Some dishes may take ages to prepare and sometimes you simply have to find that way around them. This here is a variation of the original traditional dish sarma, that can take up to three hours to prepare because of all the delicate work involved. And I know I am not alone when I say three hours for a meal I am going to eat in 15 mins?! No f***ing way, man! This dish still gives you all of the nutrients that the sarma has and it takes only a third of the time you’d need to prepare the original recipe. I love cheats and tricks 🙂
Hello friends, sorry for not being able to post these last couple of days, but it has been rather hectic here. I am volunteering at an animal protection organization and there was this cat that got hit by a car Tuesday evening. It wasn’t until today that we finally found a foster home for her, the girl taking care of her is a nurse plus she loves animals. We believe she is in good hands. You can find her full story here.
So I have to publish four more posts (besides this one) so I can catch up on the time I’ve lost. I hope you don’t mind I cheat a little with the dates :). It is a good way for me to keep track of my posts and deliver my promise – 365 days and 365 mind blowing vegan recipes. Continue reading →
Not so long ago I was at a friend’s place and she made me these wonderfully amazing soy schnitzels. They were so irresistible I couldn’t stop stuffing my face, literally. I told my mom about them in superlatives, so, obviously, she couldn’t wait to get her hands on the recipe.
Mom is a great cook, unsurpassable really. When I was younger she entered food contests and she’s won several awards. Once she and my father made a Boing 747 cake for my cousin’s b-day and she made a 3D Charlie from The Shoe People for a cake contest. Impressive, huh? Continue reading →
Here’s what we had for dinner yesterday. The mashed potatoes are my mom’s invention and the taste – phenomenal! I really can’t get enough of oyster mushrooms cooked this way (OK, I admit, for a certain period of time, then I have to have them in some other way – preferably greasy :)). So not vegan of me, right?
Oh, and we’re in Skopje now, we had to come back yesterday evening, cause I had to go to work today (bummer!). Continue reading →
This is how we started our day today. It was a wonderful sunny morning and while we had our coffee and biscuity beer rolls in our garden, a hungry furry friend came along looking for some food. Prince got really scared of him, but then he became curious (cats, go figure!). We fed our friend with some food that bf’s parents had forgotten in the fridge right before they left. So the friend was in luck because none of the food that we have with us he would have liked. After we were all set and left the bread in our brand new bread maker we went for a stroll by the lake. I am making a special post with a gallery of all the pics we made today, cause they are all amazing. We made a bunch of family selfies, Prince being the star of the show, of course. And while we were laughing and posing in front of the camera a swan swam in near the shore. I have to admit, I have Continue reading →
2 tsp instant coffee *We use Jacobs Intense, it reminds me of Rome and the best cup of coffee I’ve ever had in my life! 2 tsp unrefined cane sugar
2 cups soy milk
5 tbsp lukewarm water
Vanilla extract, to taste (you can substitute it for 1 pkg powdered vanilla)
A pinch of raw cocoa powder Continue reading →
Remember the best beans in the world I was telling you about in this post? Well, I did get the recipe for this great and highly nutritive dish. While I was researching the ingredients online I came across some interesting stories about bay leaf, and from now on I plan to use it more often in my recipes.
Ingredients 1 fresh active yeast (40 g)
1 tsp salt
1 tsp sugar
1 kg all purpose flour
1/2 l water *This is an approximate measure, you may need more water so the dough is soft and it doesn’t stick to your hands when you knead it Continue reading →
400 g all purpose flour
1 pkg (10 g) baking powder
100 g unrefined cane sugar *If you want to omit the sugar, you can substitute it for 1 cup of dates
1 pkg (10 g) powdered vanilla sugar (or simply the vanilla extract you usually use)
1 tsp salt
1/2 tsp ground cinnamon Continue reading →
Here’s what you’ll need for this wonderful snack:
2 medium sized Japanese persimmons
couple of walnuts, chopped
Wash the persimmons thoroughly. Remove the green cap from the top. Take a tsp and scrape the gooey inside of the persimmon into a bowl through the hole that was created from removing the cap. Continue reading →
Here’s what you’ll need: 1 1/2 cup white rice You can also use whole rice if you want, or maybe mix the two, and throw in some rice shaped vegan pasta, bf’s mom did this last time we had lunch at their place and it was really great 1 medium sized red onion, grated 2 medium sized garlic cloves, chopped
2 medium sized carrots, grated
1 large tomato, grated Continue reading →
Believe it or not this is my first time eating seitan at home after becoming vegan. This was from my lunch today. I had to do some chores and didn’t have much time to prepare something more elaborate, so here’s a quick and easy recipe.
In the beginning of December me an my boyfriend of 6 years moved to our own little apartment (temporarily, until we finish the weekend hill house we love very much). He is the one that taught me how to cook actually, and now he says I am even better than him :). We both have our jobs and you can only imagine how much work does a new condo take. However, we both know we have to Continue reading →
